Boone Tavern Spoonbread

2 C. yellow cornmeal
1 t. salt
2 t. baking powder
4 eggs, separated
2 C. boiling water
butter (no substitute)

Sift cornmeal, salt and baking powder together in a mixing bowl. Add boiling water to meal mixture, enough to make a medium batter. Add beaten egg yolks, stirring gently. Last of all, add stiffly beaten egg whites, folding in carefully.

Pour into a greased ovenproof skillet and bake at 400F. until golden brown. Serve hot with real butter.

We like to serve this with the salad course. Boone Tavern serves it as soon as you are seated. Most people around here serve it as the either the bread or as an appetizer.
