I saw Buckwheats post on lemon shortbread and it made me think of these! These are by far, the BEST and softest cookies I've ever had! I'll have to make some soon, and give away most, because I could eat them all! Eek Roll Eyes Big Grin
Lemon Snaps
1 ½ c. butter
4 c. flour
½ c. sugar
2 t. baking powder
2 eggs
½ t. baking soda
1 t. lemon extract
1 c. sugar
1 t. vanilla
2 T. lemon peel; grated
½ c. milk
In a bowl combine butter and sugar. Add eggs lemon and vanilla extract and milk. Add flour, baking powder and baking soda. Chill dough in refrigerator. Roll dough into balls. In a baggie combine sugar and lemon peel. Roll dough in sugar mixture. Place on cookie sheets and bake at 325 for 8 – 10 minutes.
