    OMG, this recipe is good. And easy. I just made it today at work and everyone loved it. I also brought fat-free whipped cream for everyone to use....mmmm....Wink



    CARROT CAKE

    4 eggs, beaten
    1 cup vegetable oil
    2 cups grated raw carrots
    3 cups all-purpose flour
    3 teaspoons baking powder
    2 teaspoons baking soda
    2 teaspoons ground cinnamon
    teaspoon salt
    2 cups sugar
    cup chopped pecans

    1. Pre-heat oven to 350F.
    2. Combine eggs and oil, mixing well. Stir in carrots and set aside.
    3. Sift dry ingredients three times. Add to carrot mixture gradually, mixing well.
    4. Stir in pecans.
    5. Pour batter into a greased cake pan.
    6. Bake for 55-75 minutes, depending on size of pan.
