    This week, I perfected the peanut butter cookie. I've tried many different ones and finally tweaked it enough to where they are soft, GOLDEN brown and soft. Give it a try, and trust me on the baking time.

    This recipe may be doubled!

    Stephanie's soft batch double peanut butter cookies (What a name)

    1/2 cup Shortening
    1/2 stick butter or margarine, softened
    1/2 cup sugar
    1/2 cup light brown sugar
    1 egg
    3/4 cup Peanut butter (I sometimes throw in just a little more)
    1-1/4 cups all-purpose flour
    1/2 teaspoon baking soda
    1/2 teaspoon baking powder
    1/4 teaspoon salt
    1 cup Peanut Butter Chips


    Heat oven to 375F. Beat butter, both sugars,egg, shortening and peanut butter in large bowl until creamy Stir together flour, baking soda, baking powder and salt; gradually add to peanut butter mixture, beating until well blended. Stir in peanut butter chips; roll into 1" balls and place on ungreased cookie sheet - Dip a fork in sugar and mash the cookies twice, making a criss cross- Bake for FIVE (yes 5, trust me) minutes and pull out of the oven - let them sit on the cookie sheet for 1-2 minutes - after doing so move immediatly ( be careful, they're fragile) to a cool counter top (thats what I use) Cool completely. Makes about 3 doz. cookies.
