This is a tried and true recipe I've been using for 25 years. It's always moist and delicious!
Bette's Zucchini Bread
3 eggs
1 ½ Cups sugar
1 Cup vegetable oil
2 Cups grated zucchini
2 Cups flour
2 teasp. baking soda
¼ teasp. baking powder
3 teasp. salt
1 Cup nuts or rasins if desired
Beat eggs, oil and zucchini together. Add dry ingredients, mix well. Add nuts or raisins, or both. Pour into two bread pans, greased and floured.
Bake at 350 degrees for 50 minutes.
Also makes 3 dozen cupcakes...bake at 350 degrees for 15 minutes.
