  • Chocolate Chip Oatmeal Sheet Cake

    Don't know if anyone has posted this recipe, but we made it several times and not only did the kids love it, everyone ate it up!

    1&3/4 c boiling water
    1 c oats (do not use instant)
    1 stick butter
    1 c light brown sugar, packed
    1 c white sugar
    2 large eggs
    1&3/4 c sifted AP flour
    1 t. baking soda
    1/2 t. salt
    1 T. unsweetned cocoa powder
    1 12 package of chocolate chunks or chips (semisweet)
    3/4 - c. chopped pecans or walnuts

    Preheat to 350 degrees & grease a 15X10 inch pan with butter flavored shorting

    Pout the boiling water over the oats and allow to stand for about 10 minutes.
    Add the butter and stir in well until butter in melted.
    Add the sugars and stir until dissolved.
    Add the eggs and mix well.
    Sift together the flour, soda, salt, and cocoa.
    Add to the oat mixture and mix well.
    Pour batter into the baking pan.
    Sprinkle the chocolate chips and nuts on top of batter.

    Bake for about 25 minutes and cool before cutting into squares.

    NOTE: you can use less sugar if you want by reducing both to 3/4 cup each.
    Easy to make
