Peaches and Cream Cake

  • Peaches and Cream Cake

    Cake:

    1 1/2 cups all purpose flour
    2 tsp baking powder
    1 tsp salt
    1 cup milk
    2 eggs
    6 TBSP butter or margarine, softened
    2 pkgs (3oz size) vanilla cook and serve pudding mix
    Cream margarine; add rest of the ingredients; mix well. Pour into a 13X9 baking pan. Set aside.

    Drain 2 (1lb 14 oz each ) cans peach slices
    **save 6 TBSP juice
    Place peaches in a layer on top of the cake. Set aside.

    2(8oz pkg) cream cheese softened
    1 cup sugar
    6 TBSP peach juice
    Combine and beat until smooth. Spread over peaches.

    Mix and sprinkle 1 TBSP sugar and 1/2 tsp cinnamon over the top.

    Bake at 350 degrees for 45 minutes.

    This does sound good. Furthermore, it doesn't start with a cake mix.

      It does sound good. Did the peaches sink into the cake after baking?

        It does look good. No sugar in the cake, odd? I guess the pudding sweetens it up, huh. The frosting with cream cheese mixed with peach juice is a good idea.

            Definitely doesn't need sugar. The pudding and topping is enough.

                This sounds yummy, now I need to get to the store. I may try to find the SF pudding and use splenda and see how that works. Love to make home made cake.

                  This sounds so good. I was just wondering if anyone has tried this with fresh peaches. I know that means no real juice for the cream cheese topping but man, I bet it would be amazing with fresh peaches.
