Meyer Lemon Pudding Cake
The best recipe I ever used for lemon cake
3 Egg -- separated
1/4 C Sugar
2/3 C Sugar
1/4 C Flour
7 Tbsps Fresh Meyer Lemon Juice
1/4 C Butter -- melted
1 Tbsp Meyer Lemon Zest -- grated
1 1/2 C Buttermilk
Berry Topping
1 Pt Seasonal Berries
1/2 Orange -- juiced
1 Tbsp Sugar
1 Whole Meyer Lemon -- zested
Heavy Cream -- whipped
Preheat oven to 325*
Beat egg whites with 1/4 cup sugar until stiff peaks form. Set aside.
Combine 2/3 cups sugar with flour in a small bowl.
Combine lemon juice, melted butter and lemon zest and add to the sugar
flour mixture.
Mix together egg yolks and buttermilk and add to lemon mixture. Fold in
beaten egg white.
Butter and sugar 6 ramekins and fill 3/4 full. Place in an ovenproof dish
and add hot water 1/2 way up the ramekins.
Bake until top feels slightly firm but not brown - about 20-25 minutes.
For a more cakelike texture bake a little longer or shorter for a more
puddinglike texture.
Remove from oven and immediately remove from water bath. Cool to room
temperature and chill to serve.
Garnish with berry topping and a dollop of whipped cream.
