  • "My" Orange BRUNCH Muffins by Buckwheat

    1 large orange (sweet)
    1/3 c. orange juice
    6 T. butter at room temp & cut into chunks
    1 large egg
    1/2 cup seedless golden raisins (optional)
    1 T. light RUM
    1 & 1/2 cup all purpose flour
    3/4 cup sugar
    1 t. baking powder
    1 t. baking soda
    1 t. salt
    GRATE the rind of the orange into a small bowll & set aside.
    Remove & discard the white pith,and cut the orange into quarters, and remove the seeds.
    PREHEAT the oven to 400 degrees
    In a blender, combine the orange rind,, orange, orange juice, butter, egg, raisin & rum and blend about 5 seconds. Transfer mixture to a large bowl. In another bowl sift the dry ingredients, then add it to the orange mixture & stir until JUST BLENDED (Do not over stir)!
    Spoon mixture into a buttered & flured 12 cup muffin tin, and fill each cup 2/3's full.
    BAKE until muffins are golden about 15- 20 minutes.

    ORANGE GLAZE
    1/3 cup sugar
    1/4 cup orange juice
    Mix well until sugar is dissolved
    OR
    2 & 1/2 T. Orange Liquer
    2 T. sugar
