    Hawaiian Wedding Cake

    Cake:
    2 beaten eggs
    2 cups sugar
    2 cups flour
    2 teaspoons baking soda
    1 teaspoon vanilla
    1 cup chopped nuts
    1 20 oz can crushed pineapple, do not drain
    1 cup coconut, optional

    Icing:
    1 stick margarine or butter, softened
    8 oz cream cheese, softened
    2 cups powdered sugar
    1 teaspoon vanilla

    Mix cake ingredients together and pour into a greased 9x13 pan. Bake for 35-40 minutes at 350 F.

    For icing, beat ingredients until smooth. Spread over cooled cake.

        No butter, shortening or oil. The juice from the pineapple is enough to make this cake very moist. Just make sure you do not drain the pineapple. It is absolutely fabulous!

                I'm making this cake on Sat to take to my DD's house for a get together. I'll take a pic and post it.
