    Apple Coffee Cake

    PREHEAT OVEN TO 350

    TOPPING (make the topping first)
    2 tablespoons butter
    1/3 cup brown sugar
    2 cups cored and sliced apples,
    Dash cinnamon


    Melt butter in medium sauce pan. Add brown sugar and cinnamon. Stir until combined. Add apple slices. Stir and simmer on a low heat while you mix the cake batter.

    Mix together:
    2 cups flour
    2 1/4 tsp. baking powder
    1/2 tsp. salt.

    Mix in separate bowl:
    1/2 cup shortening 1/2 cup sugar

    Add to shortening and sugar mixture:,
    3 eggs, mixing well after each addition.

    Add dry mixture to the batter alternately with
    1 cup milk (room temp)

    Pour batter into greased 9 x 13 inch baking dish. Spread apple topping over batter.

    BAKE for 30-35 minutes, or until hot & bubbly and golden brown.
