    Butterscotch Mocha Pound Cake

    1 6oz pkg butterscotch morsels
    2 Tbls instant coffee
    1/4 cup water
    1 cup butter or margarine, softened
    1 1/2 cups sugar
    3 cups all purpose flour
    1/2 tsp baking soda
    1/4 tsp salt
    3/4 cup buttermilk
    4 eggs

    Combine butterscotch morsels, coffee, and water in top of double boiler. Stir until smooth. Set aside. Combine butter and sugar; cream until light and fluffy. Stir in butterscotch mixture. Combine flour, soda, and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. Add eggs one at a time, beating well after each addition. Pour batter into a well greased and floured 10 inch bundt pan. Bake 350 degrees for 55-60 minutes. Cool 10-15 minutes. Remove from pan.
