    Rhubarb Coffee Cake:

    Not T&T
    Serves 18-24


    2 c.sifted all purpose flour
    1&1/2 c.sugar
    1 tsp.baking soda
    1 tsp.salt
    1 tsp.cinnamon
    1/4 tsp.allspice
    1/4 tsp.cloves
    2 eggs
    1/2 c.vegetable oil
    1/3 c.milk
    2 c.fresh rhubarb,cut in 1/2" pieces

    Sift dry ingredients together in a mixing bowl.Place eggs,oil & milk in another bowl & beat together.Then add to dry ingredients.Fold in rhubarb.Turn into a greased 9"x13" baking pan.Make topping(see below)& spoon over batter.Bake @ 350 for 50 minutes.

    Topping:
    2/3 c.flour
    1/2 c.brown sugar
    4 Tbls.butter
    1/4 c.chopped nuts

    Combine flour,brown sugar & butter with a fork.Add nuts & stir.

    Just to let everyone know, this recipe is a keeper. I made it this week. Loved it!

      I made this yesterday, and it's very good. You can serve it morning, noon, or night!
