If you like the cake balls you'll also love these. So easy

    Peanut Butter Balls

    2 C rice crispies
    1 C peanut butter
    1 C icing sugar
    1/4 C melted butter
    1/2 C chopped walnuts
    1/2 C desiccated coconut
    1 Pkg Chocolate chips (small)
    2 Tbsp Parawax

Combine first 6 ingredients well and put in fridge for one hour. Then roll into balls. Melt one package chocolate chips in a double boiler with parawax and blend well (be very careful, this wax is flammable) Roll balls in chocolate mix and place on wax paper and chill

I think I will make these for the goodie box I am making for DH's work. I looked up desiccated.

        des·ic·cat·ed [déssi kŕytəd]
        1. dried: dried and often pulverized
        2. without vitality: used to describe something, especially a literary work, lacking in energy or vitality

It is coconut that is in very small pieces - not like the strands you can generally find. And believe me the flavour is not lacking in energy or vitality.
