A friend of mine from England gave me this recipe about ten years ago. She called it Mexican Fruit Cake.
Preheat oven to 350
Mix together:
2 eggs
2 cups sugar
2 cups flour
2 t baking soda
1 cup pecans or walnuts
1 (20 oz)can of crushed pineapple, with juice
Bake for 45 minutes.
Topping
2 cups powdered sugar
1 t vanilla
1 pkg (8 oz)cream cheese
1 stick (1/4 lb)margarine.
Spread on cool cake.
