Cherry Cookies
These are good!
1 cup butter, at room temp
1 cup powdered sugar, sifted
2 cups all purpose flour
1/4 t. salt
1/2 t. grated lemon peel/zest
48 maraschino cherries, very well drained
2-1oz. squares of dark, sweet chocolate, melted
Preheat oven to 325 degrees
Cream butter and sugar
Sift together flour and salt, and add to butter mixture. Add lemon zest, and mix well.
Using your hands, take about 1 tsp. dough and shape around a cherry. Enclose cherry by pinching together at the top.
Place cookie balls 1 & 1/2 inches apart on an ungreased baking pan.
Bake for about 12-15 minutes.
Cool on rack, then dip top of cookie in the melted chocolate.
