    Baking this as I post the recipe. Smells delicious & is baking really nice!

    1 & 1/2 cups sugar
    2 eggs
    1/2 cup oil
    2 cups flour
    1/2 t. salt
    2 t. baking soda
    1 med can (20oz.) crush pineapple (in juice)
    3/4 cup coconut

    TOPING
    1 stick butter
    3/4 cup sugar
    small can of evap milk
    1 t. vanilla
    1/2 cup chopped nuts (optional)

    Beat sugar, eggs and oil together
    Add the flour, salt & baking soda
    Mix Well
    Add the pineapple and the juice from the pineapple. Mix well
    Pour mixture into a 9X13x2 inch pan (greased)
    Sprinkle cake batter with the coconut
    Bake at 350 (preheated) degrees for about 35-40 minutes.

    Hummmmmmmmmmmmmmmm It smells so good!

    Topping directions:
    Boil all of the ingredients, except the vanilla & optional nuts for 1 minute.
    Remove from heatAdd vanilla & optional nuts
    Spread while cake and icing are still hot.
    Serve cake when cooled.
