We served this cake thinly sliced. Very delicious flavor. None was left on the platter!
5 T. butter
1&1/4 cups sugar
2 large eggs
2 cups flour (WL)
2 t. BP
1 t. BS
1 t. ginger
2 t. cinnamon
5 medium sized, ripe bananas
1/4 cup STRONG black coffee
FROSTING
3/4 cup powdered sugar
2 T. strong black coffee
2 T. flaked coconut
PREHEAT your oven to 375
Grease & flour loaf pan
Cream the butter and sugar until light and fluffy.
Add the eggs one at a time until incorporated
Mix flour, BS,BP and spices and stir into the batter.
Alternate the bananas and coffee, and mix well.
Pour into baking pan and bake for about 50-60 minutes. Do a test.
Cool cake on a rack.
Mix the powdered sugar with the coffee until smooth and spread over the cake while slightly warm.
Sprinkle with coconut.
