Lemon Bread and Tea Bread by Tessa

    These recipes I got backin the '80s from our school cookbook. They have always been a hit with my family.

    Robin's Lemon Bread

    1 med. lemon
    2 1/4 cup all purpose flour
    1 1/2 tsp. baking powder
    3/4 teaspoon salt
    sugar (divided.. 1 1/2 cups & 2 Tablespoons)
    3/4 c. butter/margarine
    3 eggs
    3/4 c. milk

    Preheat oven to 350.

    Grease 9 x 5 loaf pan

    Grate 1 T. lemon peel and squeeze 4 1/2 teaspoons lemon juice.

    In large mixing bowl with fork, mix flour, baking powder, salt and 1 1/2 cups sugar.

    With pastry blender, cut in butter until mixture is coarse crumbs. Stir in lemon peel.

    In small bowl, beat eggs with fork and stir in milk, then stir this mixture into flour just until flour is moistened.

    Bake 1 1/4 hours.

    Cool 10 min. and remove from pan.

    In saucepan, heat lemon juice and 2 tablespons sugar to boiling. Cook, stirring until thickened. (about 5 mins)

    Brush sugar mixture evenly over top of bread.

    Serve warm or cold


    Lemon Tea Bread

    1 c. sugar
    5 tablespoons butter
    2 eggs
    1 lemon, grated rind
    1/2 c. milk
    1/2 teaspoons salt
    1 1/2 c. flour

    Blend butter and sugar. Beat in eggs. Add milk and mix well. Sift dry ingredients together, add to batter, beat until smooth.
    Add lemon rind.

    Place in greased bread pan and bake at 350 for 1 hour

    While bread is baking, mix juice of 1 lemon and 1/2 c. sugar until sugar is dissolved. Spoon glaze over hot bread before removing from pan. Continue to do until bread has absored all of the glaze.
