Here's a great spring and summer dessert. It's so cool and pretty and super easy to make. You can also make this very low fat and low calorie!
LIME JELLO CAKE
1 Small package Lime Jello (Sugar free OK)
1 can (16 oz.) fruit cocktail, drained(Save the juice to mix
with the Jello) or combination of canned fruit of choice
1 small container Cool Whip (Cool Whip Lite OK, or use
equivalent amount of Dream Whip)
1 small to medium store bought angel food cake
Make lime Jello according to package directions for adding ingredients. Use the reserved juice from the fruit cocktail for some of the liquid.
When the Jello has started to thicken, add the fruit cocktail and the Cool Whip to the Jello mixture and mix till completely blended.
Tear the angel food cake into 1 inch chunks and mix lightly with the Jello mixture. Pour into ring mold or bundt pan that has been sprayed with non stick cooking spray and refrigerate until completely set. Remove from mold and garnish if desired and serve chilled. Great for a summer dessert.
NOTE: I’ve tried other flavors of Jello, but the lime is by far the best tasting in this recipe.
