This is the most delicious cake in the world and is very easy to make. Just be sure to make it the night ahead for best flavor as the longer it sits, the better it tastes.
Black-Derby Cake
1 layer chocolate cake
1 layer yellow cake
1 pint of Heavy whipping cream, whipped still stiff and sweetened
1 pint of strawberries sliced
1 can of peaches in syrup
1 can crused pineapple in juice
2 sliced bannanas
1. Bake cake layers according to package directions and cool. Make sure both layers are very level.
2. Drain liq from peaches and pineapple and reserve in bowl.
3. Place choclate layer crumb side up on serving platter. Drizzle pineapple and peach juices on it so that it soaks it up. Top with 1/2 of whipped cream. Arrange strawberries, bananas, peaches, and pineapple ontop of whipped cream. Top with yellow cake layer
4. Repeat as above but lay the fruits in a decorative pattern.
5. Let cake sit for at least a few hours. The riper the fruit and the longer the cake sits, the better it tastes. You can also make it as a layered Trifle.
