Bananas Foster Pound Cake by Buckwheat

    Well, I should have baked two of these yesterday. Not one crumb left!

    3 sticks butter (butter)
    3 cups sugar
    5 large, fresh eggs
    3 overripe bananas (remove any dark spots)
    3 T. half & half
    1&1/2 t. good, pure vanilla
    3 cups flour (I use White Lily)
    1 t. baking powder (make sure it is fresh)
    1/2 t. salt

    PREHEAT oven to 350 degrees
    GREASE & flour your tube pan

    Cream the butter and sugar until light.
    Add the eggs, and beat one at a time.
    In another bowl mix combine the flour, BP, and salt.
    In another bowl mash the bananas with a masher. Add the vanilla and half & half to the banana, and mix well.
    Add half of the flour mixture to the creamed butter & sugar, and mix well.
    Add half of the banana mixture to the butter/sugar mixture.
    Add the remaining half of the flour mixture
    Add the remiaining banana mixture, and blend well.
    Scrape down the sides of the bowl and mix well until batter is smooth.
    Spoon the batter into the prepared pan.
    Smooth on top and tap pan
    Bake in middle of the oven for half an hour.
    Then turn the pan 180 degrees, and bake for another 20 minutes or until done. Do not overbake. Use toothpick test.
    Allow cake to cool in pan for at least 15-20 minutes
    While cake is cooling make your glaze (which is delicious)!

    GLAZE:
    1 stick butter
    1/2 cup light brown sugar
    1 T. rum
    3 T. Banana liquer

    COMBINE the ingredients in a saucepan over medium heat, and bring to a boil, stirring constantly. Cook for about three minutes and then take off the stove.

    Invert the cake on a rack orcake plate. Cool the glaze a bit then drizzle it over the cake. Allow to cool, then eat it!
    If you have any left over cover with your cake top.
