Golden Corn Bread
1 c. Yellow corn meal
1 c. All-purpose flour
1/4 c. sugar
4 tsp baking powder
1/2 tsp salt
1 c. milk
1 egg
1/4 c, vegetable shortening
Note: I use self-rising flour instead of all-purpose, and omit the salt and baking powder.
Combine dry ingredients. Add milk, egg, and shortening. Beat until fairly smooth, about 1 minute. Bake in seasoned iron skillet, or an 8" square baking pan in preheated 425 degree oven. Bake for 20 to 25 minutes.
