    Pecan Pie Muffins:
    Makes 6 muffins

    1 c.chopped pecans,mixed w/1 T.melted butter
    1/2 c.all purpose flour
    1 c.firmly packed brown sugar
    2 large eggs,lightly beaten
    8 T.(1 stick)salted butter,melted

    Preheat the oven to 300 degrees.Spread the buttered pecans on a baking sheet & toast in the oven for 4-6 minutes,till fragrant.Remove from oven & let cool slightly.

    Increase the oven temperature to 350 degrees.Line a 6 cup muffin tin w/paper liners & coat w/cooking spray.Combine the toasted pecans,flour & brown sugar in a bowl.Make a well in the center of the dry ingredients,add the eggs & the melted butter & mix just till dry ingredients are moistened.Spoon the batter into the paper-lined muffin cups,filling 3/4 full.Bake for 20-25 minutes,till tops are lightly browned.Remove from the pan immediately to a wire rack & let cool completely.
