    Chocolate Cherry Crunches:
    Makes 2 dozen

    1/2 c.shortening,plus more for greasing the pans
    3/4 c.powdered sugar
    1 tsp.vanilla
    1(1oz.)square unsweetened chocolate,melted
    1&1/2 c.all-purpose flour
    1/8 tsp.salt
    24 maraschino cherries,well drained & stems removed

    Preheat oven to 350 degrees.Grease 2 baking sheets w/shortening,set aside.

    In a large bowl,cream together the shortening & powdered sugar.Stir in the vanilla & melted chocolate.Add the flour & salt,mix till well combined.

    Using a teaspoon,scoop out a heaping spoonful of dough.Place a cherry in the middle,then place another heaping spoonful of dough on top.Roll the dough into a ball to encase the cherry securely.Repeat w/the remaining dough & cherries.

    Place the cookies on the prepared baking sheets & bake for 12-15 minutes or till the dough is set & lightly browned.Remove from the sheets & let cool completely on wire racks.
