Praline Cookies:
Makes 8 dozen
2/3 c.soft shortening,plus more for greasing the pans
1&3/4 c.all-purpose flour,plus more for dusting the pans
1 c.sugar
1/2 c.mild molasses
2 eggs
1/2 tsp.vanilla
1 tsp.burnt sugar flavoring
1/2 tsp.baking soda
1/4 tsp.ground mace
1/4 tsp.salt
1&1/2-2 c.chopped pecans
Preheat oven to 375 degrees.Grease 2 baking sheets w/shortening,dust lightly w/flour,set aside.
In a saucepan over low heat,slowly melt the shortening.Remove from the heat & let cool.Transfer the melted shortening to a large bowl.Add the sugar & molasses,stir well.Add the eggs,vanilla & burnt sugar flavoring,mix well.
In a large bowl,sift together the flour,baking soda,mace & salt,add to the molasses mixture,mixing well.Stir in the nuts.
Drop by scant teaspoonsful onto the prepared baking sheets,2" apart.Bake for 8-10 minutes,till golden brown.Immediately transfer cookies to wire racks to cool.
