Just Good Ice Box Cookies
Take these to your next pot-luck or as a gift for someone you love
1 c. UNSALTED butter, softened to room temp
1 c. brown sugar (light)
1 c. sugar
2 large eggs, lightly beaten
1 t. BS
1 t. salt
1 t. pure vanilla
2 cups toasted pecans, in pieces
4 cups all purpose flour
Cream the butter and sugars.
Beat in the eggs, BS, salt, and vanilla.
STIR in the pecans
STIR in the flour in 3-4 batches
Tear off 18 inches of wax paper.
Divide the dough into equal portions and shape into a log about 6 inches long.
Wrap each log, twist the ends of the paper and place in the frig to chill for a few hours or even over- night.
preheat oven to 325 degrees
Slice rolls into 1/4 inch thick slices and Place on and UNGREASED cookie sheet.
Bake until golden about 12-15 minutes.
Cool on a rack.
Hummmmm, excellent with your favorite tea!
