I made this bread yesterday, using powdered buttermilk. This recipe was given to my friend. It is the recipe brought over from Ireland by the mother of a priest (he is now deceased).
You need to try the caraway version, if you never have tasted it before.
Fr. Maurice O'Connell's Irish Soda Bread
3 cups whole wheat flour
1 cup all-purpose flour
1 1/2 tsp salt
1 tsp baking soda
3/4 tsp baking powder
1 1/2 - 2 cups buttermilk
Mix dry ingredients together. Stir in buttermilk. Turn out onto floured board. Knead for a couple of minutes to mix. Form round loaf on a baking sheet. Cut an X in the loaf about 1/2 inch deep. Bake at 350 degrees for 45 minutes.
