This recipe comes from a good friend I met on CK and truly miss. I have not made this yet but plan on soon. Tart apples and Cheddar Cheese just go together so well.
Apple Pretzel Crisp with Wisconsin Aged Cheddar

1-2/3 cups crushed pretzels, divided (aobut 4 cups broken up pretzels)*
2-1/2 tsp ground cinnamon, divided
1-1/2 tsp grated lemon peel, divided
8 cups cored, sliced Granny Smith apples
2-1/2 cups natural unsweetened applesauce
2 cups (8 oz) finely shredded Wisconsin sharp cheddar, divided
1 cup firmly packed light brown sugar
3 tbsp melted butter
low fat yogurt, optional
Preheat oven to 350 degrees. In a large bowl, combine 2/3 cup of the pretzel crumbs, 2 tsp of the cinnamon and 1 tsp of the lemon peel. Add apple slices, tossing to coat well. Stir in applesauce and 1 cup of cheedar. Spread mixture evenly in a baking dish.
In a medium bowl, combine remaining pretzel crumbs and cheese, brown sugar, remaining cinnamon, lemon peel, and butter. Sprinkle evenly over apple mixture. Bake 50-60 minutes or until golden, bubbly, and thick. Cool slightly before cutting. Serve warm or cold, topped with yogurt.
* To make the crumbs, place pretzel pieces on waxed paper. Cover with additional waxed paper. Using a rolling pin, crush or roll until crumb consistency, or place pretel pieces in a food processor. Pulse until crumb consistency.
