Caramel Shortbread Slice
These are to die for. And really easy too.
1 1/2 cups softened butter, divided
1/2 cup icing sugar
1/4 tsp salt
1 1/4 cups flour
1 can sweetened condensed milk
3 Tbsp. corn syrup
1 tsp vanilla
3 oz. semi sweet chocolate, melted
Preheat oven to 350. In large mixer bowl beat 1 cup butter, icing sugar and salt until fluffy. Beat in flour and mix well. With floured fingers, press into greased 9 x 9 pan. Bake for 30 minutes or until lightly browned. Cool slightly.
In large micro bowl with handle, melt remaining 1/2 cup butter. Add sweetened condensed milk and corn syrup. Micro on high for 7 minutes, stirring at one-minute intervals. Stir in vanilla.
Pour caramel over shortbread base. Drizzle with melted chocolate. Chill until firm and cut into bars.
