I made this a few days ago, and it's super! This is a moist bread, with lots of rye flavor.
POTATO RYE BREAD (for bread machine)
Measurements are for a small 1 lb. loaf and large 1 1/2 lb. loaf (in parentheses).
1/2 cup (1 cup) buttermilk
1 tsp. (1 1/2 tsp.) salt
1/2 cup (3/4 cup) instant mashed potatoes, prepared as per box directions
1/4 tsp. (1/2 tsp.) freshly ground black pepper
1 Tb. (1 1/2 Tb.) sugar
1 1/2 cups (2 1/4 cups) bread flour
1/2 cup (3/4 cup) rye flour
2 tsp. (1 Tb.) caraway seeds
1 1/2 tsp. (2 1/4 tsp.) active dry yeast
Add all ingredients in the order suggested by your bread machine manual and process on the basic bread cycle according to the manufacturer's directions.
Note: A regular potato can be boiled and mashed and used in place of the instant mashed potatoes - just increase the buttermilk to 1 cup (1 1/2 cups for the large loaf).
