HONEY BUN BARS
Honey Bun Bars Crust:
1/2 cup butter
1 1/3 cups all-purpose flour
3 tablespoons cold water
2 tablespoons honey
Filling:
1/2 cup butter
1 cup water
1 cup all-purpose flour
1/4 teaspoon salt
3 eggs
1/2 cup honey
1 teaspoon almond extract
1/2 cup chopped pecans Icing:
1 cup confectioners' sugar
1/2 teaspoon almond extract
3 to 4 teaspoons milk or cream
Crust:
No need to sift flour. Measure by lightly spooning into cup and leveling off. Cut butter into flour until mixture resembles coarse meal. Add water and blend until a dough forms. With your floured fingers, press onto bottom of greased 13 x 9-inch pan. Drizzle honey over crust, and spread slightly. Spread filling over crust.
Bake at 400 degrees (preheated) for about 25 minutes. Remove from oven. Sprinkle with pecans.
Return to oven, bake 10 minutes longer. Cool slightly, and drizzle with Icing.
Filling:
In saucepan melt butter in water. Bring to a boil and add flour and salt all at once. Cook over medium heat, stirring constantly until mixture forms a stiff ball, about 1 minute. Remove from heat, add eggs, one at a time, beat until smooth and glossy. Stir in honey and almond extract.
Icing:
Combine all ingredients until well mixed.
APPLE BARS
These are easy and delicious. A good way to use up some apples.
INGREDIENTS:
2 1/2 cups all-purpose flour
1 teaspoon salt
1 cup butter, chilled
1 egg yolk
2/3 cup milk
1 cup crushed cornflakes
8 cups thinly sliced apples
1 cup white sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 egg white
2 tablespoons white sugar
1/2 teaspoon ground cinnamon
1 cup confectioners' sugar
1 1/2 teaspoons milk
1/2 teaspoon vanilla extract
DIRECTIONS:
Preheat oven to 350 degrees.
In a medium bowl, stir together the flour and salt. Cut in the 1 cup butter until mixture is like meal. With a fork, stir in the 2/3 cup milk and egg yolk.
Divide dough into 2 equal parts. On a lightly floured surface, roll out 1 piece of dough into a large rectangle. Place in the bottom of a 9x13 inch baking pan. I use my Pyrex.
Sprinkle cereal over the crust, then layer the apples over the cereal. Stir together the 1 cup of white sugar, and the and 1/2 teaspoons of cinnamon and nutmeg, then sprinkle over the apple layer.
Roll out the other half of the dough and cover everything in the pan.
Brush top crust with the reserved egg white and sprinkle with a mixture of 2 tablespoons sugar, and 1/2 teaspoon of cinnamon.
Bake for 45 minutes to 1 hour.
Top crust should be lightly browned.
Mix together the 1 cup of powdered sugar, 1 and 1/2 tablespoons of milk, and 1/2 teaspoon of vanilla until smooth.
Drizzle over bars while they are still warm.
