    Whoppie Pie

    cakes:
    1 cup sugar
    1/2 cup solid white vegetable shortening
    2 cups flour
    1/2 cup unsweetened cocoa powder
    1 12 tsp baking soda
    1 tsp salt
    1 cup milk
    2 tsp vanilla extract

    filling:
    1/2 cup butter, softened
    1 jar (7 1/2 oz) marshmellow creme
    3/4 cup confectioners sugar
    1/4 cup solid white vegetable shortening
    1/2 tsp vanilla extract

    preheat oven to 350 F.

    Grease 3 or 4 baking sheets and set aside.

    to make the cakes:
    beat sugar and shortening in a large bowl with an electric mixer until well blended.
    mix in flour, cocoa, baking soda, and salt in a medium size bowl with a wire whisk, until completely combined and light in consistency.

    With electric mixer on low speed, add flour and milk alternately to the sugar mix, starting and ending with the flour. Beat well after each addition. Beat in vanilla.

    Drop batter by heaping TBSP about 2 " apart on prepared baking sheets.

    *These cakes when finished should be around 2 1/2" in diameter and you should have 40 pies total.

    Bake for about 15 minutes or until the cake springs back when touched lightly. Remove to cool on wire racks.

    To Prepare Filling:
    In a Large bowl, combine butter, marshmellow creme, sugar, shortening, and vanilla.
    Beat the hell out of it for two minutes with mixer on high. It should be light and fluffy.

    to make a whoppie pie:
    Place 1 TBSP of Filling on flat end of cake and then top with another cake and squish a little so the filling oozes out a little.

    Pies can be wrapped individually in plastic wrap and either frozen or refrigerated if not to be eatten right away. The butter in the filling makes it unwise to keep out too long unrefrigerated.
