    Also great w/ blackberries and raspberries!

    **Blueberry Dumplings**

    1 cup all-purpose flour
    1 tablespoon sugar, plus 1 1/2 cups
    1 teaspoon baking powder
    Pinch salt
    1/2 cup (1 stick) butter, softened
    1/4 cup milk
    1 quart fresh or frozen blueberries
    2 cups water
    Vanilla ice cream or fresh cream, for serving

    Stir flour, 1 tablespoon sugar, baking powder, and salt together into a medium bowl. Cut butter into dry ingredients, using a pastry cutter or fork. Add milk to form dough. Set dumpling dough aside.
    In a large saucepan, combine berries, 1 1/2 cups sugar, and water and bring to a boil. Drop dumplings into hot boiling berries by the tablespoonful. Cover pot, reduce heat to low, and cook slowly for 20 to 30 minutes. Do not remove the lid before 20 minutes has passed, and do not stir dumplings. Serve warm with vanilla ice cream or fresh cream.

    Here is another decent sounding one.

    BLUEBERRY DUMPLINGS

    1 1/2 c. blueberries, fresh or frozen
    1 tsp. lemon juice
    2/3 c. sugar
    1 tsp. cornstarch
    Pinch of salt

    Mix together in large sauce pot with TIGHT-FITTING LID. Bring to boil and cook about 30 seconds. Keep hot.

    DUMPLINGS:

    2 1/4 c. all-purpose flour
    4 tsp. baking powder
    1 tsp. salt
    1/2 c. shortening
    1 egg
    1 c. milk

    Mix together as for biscuits to make a soft sticky dough. Drop by tablespoonfuls onto hot blueberry mixture. Cover tightly and simmer 20 to 25 minutes. DO NOT LIFT LID until done. Serve hot, spooning sauce over top. Makes 6 to 8 servings.

      This is my dumpling recipe I got from a friend and have used forever - never had a failure.

      1 cup all-purpose flour
      2 teaspoons baking powder
      1/2 teaspoon salt
      3 tablespoons lard
      1/2 cup milk
      Cut first four ingredients to-gether with pastry blender, add milk and mix till moistened. Gently boil with the lid on for fifteen minutes.
      I use this recipe for both dessert dumplings and chicken and dumplings etc.
