This recipe was an accident. I had company coming and needed dessert in a hurry, with no time to get to the store. I just threw this pie together with ingredients I had on hand, and everybody loved it. Of course I had to share my "accident" with my CK friends!
COCONUT DREAM PIE
1 prepared graham cracker pie crust (If using Keebler brand, you may use the "two extra servings" size if desired)
1 4-serving size instant vanilla pudding
1 1/2 cups milk
1 1/2 cups miniature marshmallows
1 1/2 cups coconut
1 1/2 cups Cool Whip (can use 2 cups for creamier pie)
In medium-sized bowl, mix pudding and 1 1/2 cups milk as per package directions. Immediately after pudding is made (it will start to set immediately), stir in marshmallows and coconut; mix thoroughly. Fold in Cool Whip. Chill at least four hours, or overnight, before serving.
