Instead of doing our usual peach cobbler on New Years day, I baked four of these. There were no complaints! Smile

PREHEAT OVEN TO 350
3/4 cup all purpose flour
1/2 t. salt
1 samll box vanilla pudding
1 egg
1 t. BP
1/2 cup milk
1 large can of peaches, drain, about 3 & 1/2 cups and save the juice
1 package cream cheese, 8 oz.
1/2 cup sugar
1/2 t. cinnamon

Mix the flour, PB, salt, pudding mix egg, and milk in a large bowl.
Beat for about two minutes at medium speed.
Pour mixture into a 10 inch, greased pie pan.
Place well drained peaches on top of pie and set aside.
Mix cream cheese, sugar, and 3 T. of the peach juice together and beat for 2 minutes until smooth and creamy.
Spoon on top of the peaches about 1 inch from the edge.
Mix 1 T. sugar and 1/2 t. cinnamon together and sprinkle over top of pie.
BAKE for about 30-35 minutes.
