2 T. Gelatin
1/2 cup water
1 c. sugar
6 egg yolks
1/2 cup DARK RUM (Myers)
1 pint cold whipping cream
Mix gelatin & water in a saucepan and place over low heat for ten (10) minutes. Remove from stove, and set aside.
Cream sugar and egg yolks and add to gelatin.
Return mixture to heat for about 15 minutes. Remove from the stove. Add the rum. COOL completely.
WHIP the cream and fold into cooled mixture.
POUR into pie shell, and chill for at least a few hours. (recipe to follow)
GRAHAM CRACKER PIE SHELL
12 chocolate graham crackers
1/4 cup sugar
3 T. Butter, softened
CRUSH the crackers with a rolling pin. Add sugar & butter. Mix together well. Press into pie plate. Chill until ready to use.
SERVES 8 (ok, only four if your family is like mine!)
