Paula prepared this recipe on her show this weekend and it is sooo yummy....and so easy!! I just couldn't wait to try it.
Paula Deen's Pineapple Upside Down Biscuits
1/2 stick butter, softened
1/2 c. brown sugar, packed
1 10 oz. can crushed pineapple, drained, reserve juice
10 Maraschino cherries, w/o stems
1 can biscuits (10 biscuits in a can)
Combine drained pineapple, butter and sugar. Mix well. Divide evenly into muffin tins (use 10 wells and fill remaining 2 with water). Press a cherry into the center of pineapple mixture. Place a biscuit into each well and lightly press down. Spoon a tsp. or so of reserved juice over biscuit dough. Cook according to can biscuit directions. Makes 10.
