    A girlfriend gave me this recipe. She makes this all the time and said it's wonderful. Best part is that there is no milk in the recipe (her Mom can't have milk and neither can my two guys).

    Banana Cream Pie

    9" baked graham cracker pie shell
    3 to 4 bananas
    3/4 cup sugar
    2 tbsps. corn starch
    2 tbsps. flour
    1/4 tsp. salt
    1 cup boiling H2O
    2 egg yolks
    1 pat butter
    1/2 tsp. vanilla
    3/4 tsp. lemon juice

    In medium suacepan combine sugar, corn starch, flour and salt.

    Add 1 cup boiling H2O. Stir over medium heat until thick and boil for 1 minute. Remove from heat.

    Have 2 egg yolks slightly beaten in dish and add a bit of hot mixture to temper the eggs. Add this back to hot mixture and 1 tbsp. butter - cook for 2 more minutes. Remove from heat and add vanilla and lemon juice.

    Bake a graham cracker pie crust. Layer with bananas and cream mixture. Top with meringue.


    3 egg whites
    6 tbsps. sugar
    1 tsp. vanilla

    Beat egg whites til foamy and then add sugar 1 tbsp. at a time until stiff peaks form. Then beat in vanilla.

    Bake at 400 degrees for 8 to 10 minutes until meringue is light brown.
