  • Blueberries & Fresh Peaches in a Peach Sauce by Buckwheat

    Great for summer parties & very pretty!

    2 pints of blueberries
    3 cups sliced fresh peaches, or 2 pkg. frozen
    1 recipe for peach sauce (to follow)

    Place the fruit in a glass bowl & pour the sauce over it just before serving.

    PEACH SAUCE
    4 egg yolks
    1/4 sugar
    1/3 cup peach juice, peach brandy or peach schnapps
    1 cup heavy cream, whipped

    In a heavy pan, combine egg yolks and sugar. Heat the peach juice in a small saucepan & pour into the egg mixture, whisking constantly with a whisk or electric mixer. Continue whisking over low heat until thick, about 15 minutes. Cool slightly, then FOLD in the whipped cream. Chill very well.
    NOTE:
    This sauce will last in the frig (covered) for the period of time the cream is dated.
