Made this last nightfor my daughters office meeting this morning. Can't wait to hear if they liked it!
1/4 pound butter
3/4 c. sugar
4 egg yolks
1 large can crushed pineapple (well drained) save juice
2 egg whites
Preheat oven to 350
Cream butter & sugar.
Add egg yolks and mix well.
Add drained pineapple and 3 T. of the juice.
Beat the egg whites until stiff and fold into the mixture.
Pour into unbaked pie shell.
Apply a top crust.
Bake for 30 minutes or until filling is set.
