    FRIED FILLING
    7-8 apples, peeled, cored & sliced
    1/4 cup butter
    1/4 cup sugar
    1 T. light brown sugar
    1/8 t. nutmeg
    1/2 t. pure vanilla
    1/4 t. grated lemon peel
    1 t. lemon juice

    CRUST
    2 cups flour
    1/2 t. salt
    1/4 cup butter
    1/4 cup lard
    about 1/2 cup of water

    FOR THE FILLING
    Fry the apples in butter in batches as necessary until they are softened and slightly browned. Stir in sugars, nutmeg, lemon juice, lemon peel, and vanilla. Set aside

    CRUST
    Sift flour witht he salt. With your fingertips, work butter and lard into flour until mixture resembles coarse course meal. Stir in enough water to make a dough that hold together. Roll out 1/2 of the dough 10 inches in diameter and line a nine inch pie pan. Pour apple filling into pan. Roll out remaining dough to make a top crust. Seal edges, and make slits in top crust

    Bake pie in preheated 450 degrees 10 minutes. Reduce heat to 350 degrees and bake until crust is golden and filling is bubbling, 40 -50 minutes longer.
