This was my Mom's Rice pudding recipe.
DARLENE’S INSTANT RICE PUDDING
1 c Instant Rice
2 ½ c milk
¼ t salt
¼ t cinnamon
½ c sugar
¼ c raisins
2 eggs, slightly beaten
½ t vanilla
Ground nutmeg, optional
Combine in saucepan, rice, milk, salt, cinnamon, sugar and raisins. Bring to a rolling boil, stirring constantly. Reduce heat; boil slowly for 15 minute, stirring occasionally. Slowly pour hot mixture into eggs; beat vigorously. Add vanilla (sprinkle with nutmeg). Let cool for 10 minutes. Makes 4 servings.
