I had some delicious, sweet peaches my daughter brought home, and my neighbor gave me some from her tree, which are the white peaches. So I made peach cobbler (2) actually. Everyone went to the beach today. I was happy for the time alone Smile They will be really hungry when they come home. I baked chickens (Opelousas Louisiana style), red pepper rice, salad, and some rolls.
PEACE COBBLER
About 6 cups fresh peaches, sliced
1 & 1/2 cups milk
1 T. pure vanilla
1 t. almond flavoring
3/4 cups butter
1 & 1/2 cups flour ( I use White Lily)
1 & 1/2 cups sugar
2 t.BP
Nice pinch salt
Dash nutmeg
1/4 t. cinnamon
3/4 cup light brown sugar
1/3 cup sugar
Place the butter in you 9X13 pyrex pan, and place in a PREHEATED 350 degree oven until butter is melted.
In a large bowl, mix the sugars, flour, BP, salt, cinnamon, nutmeg.
Mix the vanilla and almond flavoring with the milk.
Add the milk to the flour mixture and mix until blended.
Pour this batter over the melted butter but do not mix it.
Layer the peaches on top of the batter.Do not mix in.
Mix the 3/4 cup brown sugar and 1/3 cup white sugar together. and sprinkle over the top of the cobbler.
BAKE for about 50-60 minutes until golden and bubbling hot.
