Dessert Nachos with Fruit Salsa
1/3 cup sugar
1 tsp cinnamon
10 flour tortillas
1 8 oz pkg cream cheese
1/2 cup orange juice
3 Tblsp honey
Fruit Salsa:
Peel and dice 2 large kiwi. Hull and rinse 2 cups strawberries then dice. In a bowl mix kiwi,
strawberries and 1 (11oz) can mandarin oranges drained and diced.
Mix sugar and cinnamon is a shallow bowl. Working with 1 tortilla at a time, brush both sides
lightly with water, then cut into 6 equal wedges. Dip one side of each wedge in sugar mixture.
Arrange in a single layer, sugar side up on oiled, foil lined baking sheet. Bake in 500F oven
until crisp and golden about 4 minutes.
In a sauce pan, combine the cheese, orange juice and honey. Whisk over low heat until
cheese melt and sauce is smooth about 3 minutes. Mound tortilla chips on platter and serve
with cheese sauce and fruit salsa.
