    Your guests will never know it's baby food. Really. Everyone go NUTZ for this cake.

    This is an awesome carrot cake recipe. If you bake them in lined (parchment paper) cookie sheet they will be easy to cut and serve.
    Depending on the size of your cookie sheet, 2 cookie sheets ought to do it.


    Coll's Carrot Cake Bars

    2 cup flour
    2 cup sugar
    1 tsp baking soda
    1 tsp salt
    4 eggs
    1 1/2 tsp cinnamon
    1 1/4 cup salad oil
    2 large jars strained Junior Carrots "or"
    3 #2 medium jars

    Combine flour, baking soda, sugar, salt, cinnamon, carrots and oil.
    Add eggs one at a time and beat thoroughly.
    Grease and lightly flour a jelly roll pan
    Bake 350 degrees for 30 ~ 40 minutes or until center is done.

    When cooled frost with cream cheese frosting:

    1 1/2 ~ 2 cups powdered sugar
    1/4 cup softened butter
    3 oz. cream cheese
    1 tsp vanilla

    Mix together and spread on cooled cake and cut into bars.
