    Pepper Steak

    1 pound steak
    1/4 cup soy sauce
    1 garlic clove, minced
    1-1/2 tsp gresh ginger or 1/2 tsp dried
    1/4 cup oil
    1 cup green onions, chopped
    1 cup bell peppers, chopped
    2 stalks celery, chopped
    1 cup water
    2 tomatoes, optional

    Cut beef across the grain into thin strips. Combine soy sauce, ginger and garlic. Add beef and marinate. Heat oil in wok or large heavy skillet. Add beef and toss over high heat until browned. Taste meat to see if tender. If not, cover and simmer up to 30 minutes over low heat. Turn up heat and add veggies. Toss til tender crisp for about 10 mintues. Mix cornstarch with water and add to skillet. Cook until thickened.
