Janell McCracken's Roast Sausage & Red Cabbage
3 lb. your favorite sausage including Keilbasi, German, Jalapeno etc.
1 small head red cabbage, rough chop
2 Granny Smith apples, rough chop
1 sm. red onion, rough chop
Thyme
salt & pepper
Place chopped cabbage, red onion and apples into a casserole dish with a little olive oil. Cook for 10 minutes at 375F. degrees. Mix and add in sliced sausage pieces and seasonings. Bake for an additional 20 minutes. Serve with potato pancakes or mashed potatoes.
