    Requested it yesterday and this is what I came up with from the responses.... made them this morning and they were a big hit!!

    1 (12oz) can buttermilk biscuits, not Grands
    5 eggs
    1/4 cup milk
    1/4 cup shredded cheddar cheese
    1/2 (4oz) can chopped green chiles
    3 slices chopped deli Virginia Baked ham
    Sprinkle each garlic powder, cumin, salt & pepper
    Mexican white cheese dip (Asadero?) from dairy section of grocery store.

    Spread biscuits on bottom and up sides of nonstick muffin pans. Should be 10 biscuits. Combine eggs, milk, seasonings, shredded cheese, ham and green chiles in bowl. Pour into buttered skillet and scramble until just beginning to set, still should be somewhat soupy. Spoon into biscuit cups and bake at 350 for about 12-15 minutes until biscuits are golden. Let set a minute or 2 before removing from pan. Serve individual servings and top with warm cheese dip. Delicious!!

    * These would also be very good with a white gravy over the top. You could scramble whatever you want itno the eggs. Chorizo sausage would have been good too with a little salsa.
