Southwest Chicken
8 chicken breasts
1 1/2 cups barbecue sauce
8 slices mozzarella or provolone cheese
1 (4 ounce) can diced tomatoes with green chilies
Place chicken breasts in baking dish. Cover each breast with barbecue sauce. Cover. Bake at 350 degrees for 1 hour. Take out of oven and put a slice of cheese on each breast. Top each breast with the diced tomatoes with green chilies. Broil 1 to 2 minutes.
